Large Cantabrian anchovies with a firm, meaty texture, packed in olive oil. Master anchovy filleters prepare the anchovies fresh, resulting in a firm flesh and intense flavor. Ideal for discerning palates. Our anchovies mature for a minimum of six months. Once they reach the desired level of maturity, they are filleted by hand, one by one, and packed in olive oil. Once opened, to maintain their full flavor for up to five days, it is important to keep the anchovies refrigerated, preferably covered and submerged in olive oil.
